There’s something about the combination of lemon and fresh herbs that makes anything seem fancy. Especially a delicate white fish.
Fish is notoriously thought of as difficult to cook. Too long and it’s rubbery. Too short and you’re at risk for getting sick — and it doesn’t taste great at that.
The good news — it’s easy to cook it to perfection. Even better news — it doesn’t take long. About 10-12 minutes per inch of fish.
Cod is a very versatile fish. It has a light, neutral flavor, and takes on whatever seasoning you like. Lemon is a natural choice for any fish, so I opted for that without question. But for seasoning, I went with something a bit bold — Ava Jane’s Kitchen Sayulita Steak & Veg.
This seasoning is perfect for steaks sure. But guess what? The robust, peppery flavor goes well with the cod, and means you don’t have to do anything fussy or complicated.
When served with your favorite veggies, this makes a delicious, healthy meal that is low in carbs and calories, but still filling and satisfying.
Ingredients

2-6 ounce cod filets

1 tablespoon Ava Jane’s Kitchen Avocado Oil
- Juice of one lemon

2 teaspoons Ava Jane’s Kitchen Sayulita Steak & Veg seasoning
Directions
Preheat oven to 400 degrees F.
- Place the cod on a baking sheet or in a casserole dish.
- Brush with the oil, drizzle with lemon juice, and sprinkle with the seasoning.
- Bake for 10 minutes per inch of fish. The fish is done when it flakes easily with a fork and reaches 145 degrees in the thickest part.
- Let rest for a couple of minutes, and serve with lemon slices if desired.
