I try to eat a salad a day, even if it’s a small one, and even if it has some not so nutritional ingredients in it. It makes me feel better to know that even when I eat not so great, at least I got some sort of veggie in? I’m not sure of the logic behind this, but it works for me.
I typically rely on the same few salads, but then get bored and have to try something new. Sometimes those make it onto my favorites list, like this one. It’s a relatively simply salad, kind of like a BLT. It’s loaded with peppery arugula, cherry tomatoes, and crispy bacon, with a few croutons thrown in. What makes it stand out though, is the dressing. It’s a simple dressing made of Ava Jane’s Kitchen Avocado Oil, lemon juice, and garlic, with a bit of mayo to help bring it together. To season it, I added a spoonful of Ava Jane’s Kitchen Everything Blend seasoning, and it happens to be the perfect mix of spices to bring this dressing to life.
Once you’ve got all the components, just toss together, and you’ve got a nice salad for lunch or side for dinner. You can add grilled chicken or shrimp for a full meal.
