Beans and rice is one of my favorite meals. It’s filling, comforting, and nutritious. Because both beans and rice are versatile ingredients, it’s also a meal that you can make differently almost every time you make it.
Like this recipe. It has ground turkey for more protein, some bell peppers for crunch, and amazing flavor thanks to Sayulita Steak and Veg seasoning. This blend is bold and robust, with lots of garlic and pepper flavor, with some spice as well. When paired with Ava Jane’s Kitchen Avocado Oil and lots of lime juice, it turns a simple healthy meal into something you’ll want to eat again and again.
I used brown rice here, but feel free to use white if that strikes your fancy. Quinoa would probably be nice as well. If you have some left from last nights dinner, this is a perfect use for it. I almost always cook extra grains for things like this, because there’s nothing easier than throwing together a meal when it’s mostly prepared in advance. It means I’m more likely to eat something healthy and less likely to order pizza, which is always a win in my book.
Ingredients

2 tablespoons Ava Jane’s Kitchen Avocado Oil
- 1 onion diced
- 1 bell pepper sliced
- 1 pound ground turkey

1 tablespoon Sayulita Steak and Veg seasoning
- 2 cups cooked and drained black beans
- Juice of 1 lime
- 2 cups cooked brown rice
- Chopped cilantro and green onions for garnish
Directions
Heat the oil in a heavy skillet over medium heat.
- Add the onions and peppers and cook until softened.
- Add the turkey and seasoning and cook until no longer pink.
- Add the beans and lime juice and continue cooking until heated through.
- Serve with the rice and top with lots of fresh cilantro and green onions.
