One of my favorite part of summer is when the peach truck arrives. If you’re not familiar, the peach truck is exactly what it sounds like — a truck that delivers the best peaches you will ever have.
I get a big box of peaches, eat as many as possible when they are fresh and then usually either freeze them or make big batches of peach jam, like this one.
Made with Yucatan Honey and Colima Sea Salt, this jam is sure to be a big hit. Spread it on toast, spoon it over yogurt, or perhaps my favorite — stir it into a bourbon cocktail for a sip of summer.
This is a quick jam recipe. It uses no pectin and doesn’t take long to set. I don’t typically can it because we usually eat it pretty quickly.
Ingredients
- 4 pounds ripe peaches peeled, pitted and chopped
- 2 1/2 cups sugar

1/2 cup Ava Jane’s Kitchen Yucatan Honey
- Juice of 1 lemon
- 1 teaspoon Colima Sea Salt
Directions
In a large saucepan, add the peaches, sugar, honey, and salt. Bring to a boil, reduce to a simmer. Using tongs, a potato masher, or spatula, crush the pieces. Simmer for 20-25 minutes until jam is thick and bubbly. Let cool completely and store in an airtight container in the fridge.
