MAPLE GINGER SPICED APPLES WITH PEPITAS

I’ve been trying to revamp my diet lately. One thing I’m trying to work on is the amount of sugar I eat. It’s easy to grab a muffin and coffee when you’re out running errands or to snack on peanut butter cups when you’re near a holiday that is focused on candy.
Fruit is a great way to overcome that — you can make low-sugar desserts pretty easily with whatever seasoning fruit you have, in this case, apples.
I also have been trying to add some nutrition to my diet. I eat plenty of vegetables and salads, so I don’t need to work on that so much, and I know that apples are healthy. But I feel like if I can add something nutritious, I may as well. So in this case, it turned out to be fresh ginger and a pinch of ground turmeric.
To finish, I added some pepitas and Colima Sea Salt. The pepitas add a welcome nutty crunch, and the salt amplifies the flavor of the dish.
This is a perfect after-dinner dessert on a chilly night, or a good breakfast to start the day — maybe serve this over oats or yogurt? Lots of possibilities here.
Ingredients
- 1 tablespoon butter
- 1 teaspoon fresh grated ginger
- 1/4 teaspoon ground turmeric
- 1 medium apple cored and sliced
- 1 tablespoon real maple syrup
- 2 tablespoons pepitas

Directions
Melt the butter in a skillet over medium heat.
- Add the ginger and turmeric and cook for 1 minute.
- Add the apples and stir and cook until the apples start to soften.
- Add the maple syrup and continue cooking until apples have reached a texture you like. Mine were softened, but still yielded a crisp bite.
- Add the pepitas and serve with a sprinkling of Colima Sea Salt.
