HOT ROASTED GARLIC BREAKFAST AVOCADO

I had some avocado fries at a restaurant recently, and I’ll admit, I was hesitant to try them. Avocado is one of those things that you don’t often see cooked. Or warm.
I’m happy to say the avocado fries were delicious, and ever since I’ve been trying to come up with different ways to cook avocados, like this one. Sadly, it’s not fries, although that is on my list of things to try. When I do, I will happily share.
Back to this recipe. It’s actually much simpler than the avocado fries I think. It’s pretty much avocado baked eggs, with the added addition of Hot Roasted Garlic seasoning and Ava Jane’s Kitchen Avocado Oil. You can add other things, of course. Like sour cream to balance the spice. Or bacon bits, or herbs. But for some things, simple is the way to go. Especially for breakfast.
Ingredients
- 1 avocado
- 2 eggs

1 teaspoon Ava Jane’s Kitchen Hot Roasted Garlic seasoning blend

2 teaspoons Ava Jane’s Kitchen Avocado Oil
- For serving: sour cream, chopped green onions, bacon bits, chives
Directions
- Preheat oven to 400 degrees F.
- Cut the avocado in half and remove the pit. Scoop out a tiny bit of avocado so you have a well big enough to crack an egg in. Put the avocado halves on a baking sheet.
- Crack an egg in each side. Sprinkle with the Hot Roasted Garlic.
- Bake for 12-15 minutes, until whites are set and yolks are done to your liking.
- Drizzle with Ava Jane’s Kitchen Avocado Oil, and top with desired accompaniments.
