CHOCOLATE FROSTED AVOCADO OIL DOUGHNUTS

Doughnuts are one of those foods that are hardly ever bad. They are also hardly ever healthy. I’ve seen recipes for “healthy” doughnuts, but really, if it’s truly good for you, is it really a doughnut? I mean, c’mon — you can either eat doughnuts or health food; there’s not much in between.
That being said, there are doughnuts that are better from a nutritional standpoint, in that they are not deep fried in hot oil. Like these lovely avocado oil scented baked doughnuts topped with a quick and easy chocolate frosting. They aren’t health food by any means, but they’re easy to make, slightly indulgent, but with an exotic flair. The rich chocolate flavor of the icing pairs nicely with the avocado oil, and a pinch of coarse sea salt cuts the sweetness and gives you that nice sweet and salty combo that’s all the rage these days.
Because a doughnut pan is shallow, it can be hard to fill. The easiest way I’ve found is to put a gallon sized freezer bag in a bowl or measuring cup and transfer the batter to it. Cut the tip off and pipe into your pan for evenly sized doughnuts.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1 teaspoon baking powder

1/2 teaspoon Aztec Sea Salt
- 2 eggs

3 tablespoons AJK extra-virgin avocado oil
- 2 tablespoons buttermilk
- 3/4 cup powdered sugar
- 1/4 cup cocoa powder
- 3-4 tablespoons milk

Directions
- Preheat oven to 375 degrees F. Spray a doughnut pan with cooking spray.
- Put the flour, sugar, baking powder and salt in a bowl and mix well.
- Whisk the eggs, avocado oil, and buttermilk in a separate bowl and add to the dry ingredients. Stir until combined.
- Fill a gallon sized freezer bag with the batter and cut off the corner. Pipe the batter into the pan until evenly filled. Bake for 10-11 minutes, until lightly browned.
- To make the frosting, put the ingredients in a bowl and whisk continually until smooth (add a pinch of salt if not using the coarse salt for topping.)
- When the doughnuts are cool, remove from pan and frost. Sprinkle with the salt and enjoy!
